Simple recipes A well balanced meal and good nutrition are important to your health and the health of your family. Eating habits can be improved through just a few changes. Here are some suggestions:

  • set up a regular family meal time
  • eat slow and pay attention to your food
  • eat a variety of foods
  • eat less, and exercise more
  • add soy, garlic, fish oil, and antioxidants to your everyday diet
  • eliminate soda and drink more water
  • add herbal tea to your every day diet (without sugar, honey, or milk additions is best)

RECIPES

Quick, Easy and Yummy Salad Vinaigrette

  1. Combine 1 tbsp. sesame oil, 1 tbsp. honey, and 1 tbsp. of fresh lemon juice.
  2. Drizzle over fresh salad greens with any fresh additions
  3. Eat & Enjoy!

Lemon and herb chicken salad

Ingredients:

  • Romaine lettuce or a green leafy mix
  • 4 boneless, skinless chicken breasts
  • Dry seasoning of choice (Italian, basil, chefs all purpose)
  • Salt and pepper to taste
  • 1 cup of shredded carrots
  • juice of 1 lemon
  • 1 tbsp. olive oil
  • 1/2 tbsp. freshly chopped , thyme, basil and oregano

Directions:

  1. Wash and dry the lettuce. Cut into pieces and put it aside.
  2. Slice chicken breasts into strips and season with dry seasoning
  3. Heat oil in a medium-sized pan, add the chicken, and cook for 4 to 5 minutes until the chicken is lightly browned.
  4. Add lemon juice, thyme, oregano, and basil and salt and pepper to taste. Cook for another 4 to 5 minutes until chicken is tender.
  5. Toss the lettuce with the chicken, lemon, thyme, oregano, and basil mixture.
  6. Eat & Enjoy

Honey Halibut

Ingredients:

1/4 cup honey

  • 1/4 cup honey Dijon mustard
  • 2 tbsp. lemon juice
  • 1 tsp. curry powder
  • 1/2 tsp. ground sea salt
  • 4 halibut fillets

Directions:

  1. Combine ingredients except for fish; stir well. Place fillets in a baking dish; brush with half of honey mixture. Turn fillets; brush with remaining honey mixture. Cover and marinate in refrigerator for 15 minutes.
  2. Remove fillets from marinade, reserving marinade. Place fillets on a lightly oiled rack in a roasting pan. Broil 10 to 12 minutes or until fish flakes easily when tested with a fork, basting occasionally with reserved marinade. Serve over Jasmine or Calrose rice.
